We’re going easy on ourselves with resolutions this year, but one change we’re trying to make after a sugar-filled holiday season is eating more veggies. And getting the kids to do so as well! Today I’m sharing a family-friendly (and veggie-heavy!) Mediterranean smorgasbord starring Boars Head Hummus products from Safeway.
Safeway sent me a variety of Boars Head Hummus this month, plus dessert hummus and tzatiki to create a recipe with. So many new flavors I couldn’t wait to try like Sweet Chili Garlic, Artichoke and Spinach, and Black Bean.
Hummus is my go-to quick lunch dipped with veggies and crackers, but it’s great for a whole dinner spread too! I was really excited to try all these new varieties – and they didn’t disappoint! The dessert hummus in particular has been a favorite of mine since I first sampled it at a Safeway event a couple years ago. You’d never know it was made with chickpeas – a must try!
This seemed like the perfect time to share our Mediterranean smorgasbord filled with something for everyone.
Start with a couple varieties of hummus (it’s all about healthy choices with those kids!), and a whole bunch of veggies to dip with. Don’t get fancy, pick things the kids will eat, like carrots and cucumbers.
Add feta cheese (I love the block version you can cut into big chunks), and any kind of bread you have around – preferably flatbread or pita cut into easy-to-handle pieces.
All these ingredients are pretty interchangeable. I never head to Safeway without checking the app first to see what kinds of deals they might be offering that particular week. Create your own smorgasbord using items that fit your budget and make use of what’s in your fridge first!
Don’t forget the couscous (it takes five minutes to make and my kids love it!), pitted olives, tzatiki sauce that you eat with everything, and some roasted chick peas (my recipe here). Play around with the ingredients and make it your own! Maybe some herbed rice and falafels from the freezer section?
Invite the family in to create their own plates with plenty of healthy choices. I could graze here for hours.
For dessert, pull out the dessert hummus and offer some fruit to dip into it. They’ll never know it’s packed with protein and made with chickpeas! Also try layering this dessert hummus into parfaits with whipped cream and fruit, just like you would pudding. Such a great product!
