It’s no secret baguette sandwiches are one of the best foods out there. The combination of crusty bread with meat, cheese, piles of veggies and the perfect sauce is heaven sent. Here are a few secrets I’ve learned while attempting to re-create *the best* baguette sandwich sold at a bakery here in town…

The first secret to an excellent baguette sandwich is to start with some fresh baguettes! I got all the ingredients from our local Safeway, except for the baguettes. Get those from your favorite, local bakery in town. Here in Bozeman, I love baguettes from Wild Crumb Bakery. And fresh bread is crucial here!
But here’s a tip, if you accidentally leave a baguette out to find it rock hard in the morning, simply do this: Run it under cold water, wrap in aluminum foil, and then put in a cold oven, turning it up to 300 degree oven for about 10 minutes. Then pull the foil off and heat for an additional 4 minutes. It definitely does the trick and will save you another run to the bakery.

Okay so back to the sandwich! FireSmith™ Flame Grilled Chicken Breast sliced thin (or extra thin). Next we’re adding Boar’s Head Havarti cheese, the creamiest mild sandwich cheese. Sometimes it can be tricky to find but I always see it at Safeway in the Boar’s Head deli section. They have some other interesting flavors too like jalapeno and dill. I used the classic Havarti this time.
We also add sprouts, pickled onions (you can make your own or try the salad bar sections of many grocery stores), Boar’s Head pickle chips, and the third secret is this DELICIOUS and easy pesto lemon mayo (recipe below!).
I add this pesto mayo to so many dishes like turkey burgers and grilled cheese. It’s so easy to make and sooo yummy adding just the perfect savory herb-y flavor.
Pesto Lemon Mayo
1/4 cup mayo
2 teaspoons prepared pesto (buy it jarred in the pasta aisle)
juice of half a lemon
Assembly time! Start with your pesto lemon mayo on both sides of the bread. Add your chicken breast in small ‘piles’. Then pile on your cheese, pickles onions, pickle chips, and sprouts on top.
Smash that sammy down and dig in! If you’re headed out on an adventure, wrap in parchment with a small piece of tape and you’re good to go! I love how well it keeps. The sprouts soak up the pesto lemon mayo and avoid it getting too soggy. It keeps well for a few hours at room temperature.
