It could be the juice cleanse I did this past week (their meals are amazing FYI) but I’m fiercely craving summer treats right now and filling my notebook with ideas to share with you. Today we have a really simple idea: strawberry ice cream pie popsicles. I love ice cream pies and these are the perfect little bites of heaven. They’re small treats which makes them great for kids, and a cinch to make. If you have store bought ice cream and graham crackers in the house you can probably pull these together lickety split. Supplies: Ice cream, graham crackers, sugar, butter, dixie cups, popsicles sticks, cut strawberries
Step 1: Melt ice cream slightly until soft, and no shame in using the store bought variety!
Step 2: Break a few graham crackers (maybe 3 or 4) in a plastic bag with a heavy handed measuring cup until crumbly (kids will love to help with this!). Pour into a bowl and add 2 T of melted butter and 2 T of sugar.
Step 3: Fill dixie cups halfway with the soft ice cream. Add a spoonful of the graham crackers and another scoop of ice cream to fill. Stick a popsicle stick inside (the graham crackers will help it stay put in the middle).
Stay 4: Sprinkle with cut up strawberries and freeze for at least a couple hours.
Stay 5: To open, peel off paper around the popsicle and it should pop out easily
You can certainly make so many varieties of these depending on what’s in your freezer and cupboard. I’m excited to try more varieties of these ice cream pie popsicles!
