I’m sharing a fun recipe today for this fun pineapple almond cheeseball to serve a crowd at the big game or another gathering with friends. It’s super easy to make and fun to decorate as well with Blue Diamond Almonds (we used the tasty Smokehouse variety for this recipe).

Start with a pineapple (our new natural grocery store was selling them for $1 each!). Cut off the top cleanly and then cut up 1/4 of the fruit into very small pieces.
Combine: a block of cream cheese, 2 T of goat cheese, 1/4 cup of cut pineapple, scallions, and crush up some Smokehouse Blue Diamond Almonds. Mix until well combined.
Form into an oval shape of a pineapple. Start to layer the almonds on, overlapping slightly as you go.
Finally, place the pineapple stem back at the top of your cheeseball pineapple and press it in firmly into the top.
Grab a knife, some flatbread crackers and friends and dig in!!
