I’m working with Method on a few posts introducing their Clean Happy Campaign. Their new June video, High Five a Rainbow, is below these photos. I thought in honor of their newest rainbow themed video, I’d try my first attempt at a rainbow cake! I’ve never made one before (despite the internet’s obsession with them) and thought I’d try baking them in mini mason jars.
I think they turned out pretty! Also, the food coloring I used was way better than the grocery store variety. You can buy it right here. Below are some photos of the process:
Mini mason jars. Greased and floured.
Mix the food coloring and cake batter in separate bowls for each color. Don’t fill them up too much or they’ll explode all over your oven! Place them on a cookie sheet to bake.
Let cool, cut off the rounded tops and finish them off with whipped cream or icing.

I’m one of those interneters obsessed with rainbow cakes! Made one for my son’s birthday but it didn’t turn out nearly as cute. The mini ones seem pretty easy
