Since November has arrived the only thing that has been on my mind is Thanksgiving dinner! One of the most classic sides of any dinner and especially Thanksgiving dinner are homemade rolls. These rolls are super fluffy, easy to make, and you can even make them in advance and freeze the dough!
Thanksgiving Homemade Rolls
1/4 cup warm water (110F)
2 packets of active dry yeast
1 1/2 cups warm whole milk (110F)
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
2 1/2 tsp. salt
2 eggs
6 – 6 1/2+ cups all-purpose flour, or bread flour if available
egg wash (1 egg whisked)
In a stand mixer, pour warm water and add in yeast, let it stand for a few minutes until foamy. In a separate bowl, combine all wet ingredients. Whisk together warm milk, melted butter, sugar, salt and 2 eggs. Add the wet ingredients to the yeast mixture.
Gradually add in the flour 1 cup at a time until it creates a soft, shaggy dough, you may have to add in more flour depending on the consistency. With the dough hook attached, knead the dough for 7-10 minutes until soft and pulling clean from the sides. When ready lift out dough, grease the bowl and place the dough back in the bowl. Cover with plastic wrap or a towel and place in a warm spot to rise for 1 hour.
Once the rolls are ready to be baked, prepare an egg wash by whisking an egg in a bowl. With a brush, add egg wash to the surface of each roll, this will help them brown, and then sprinkle lightly with flour (this is just for looks so it’s optional!). Place rolls into preheated oven at 375F for 20 minutes or until golden brown.
What a great recipe. We made these today for our left over turkey sandwiches and had to taste them early. Everyone loves them so it is going to be my new go-to recipe. I like the way they browned and know your recipe would even pass my mother’s critical reviews of yeast breads if she were still with us. Thank you so much!
Oh my goodness. You absolutely cannot beat homemade rolls at Thanksgiving… and my mouth is watering simply from reading this post! Great work!
don’t have mixer with bread hook, how else can I make them
hi! Planning on making these ahead of time (freeze) then popping in the oven as soon as the turkey comes out! Does the 2 hours include defrosting or should I take them out about 3 hrs before baking? (Guessing they’d be defrosted in an hour or so)
Thanks!!
Hi Cindy! You will add on an additional 2 hours to that second rise time, so take them out of the freezer 3 hours before baking them.
This will allow them to defrost and then rise for a second time, they should double in size before baking.
Let me know if this makes sense and if you have any more questions! 🙂
yes! Thank you!! Can’t wait to try this recipe!
Hello! Great recipe, but may I ask how many grams of yeast are in each packet? I can only buy yeast in jars where I live, so need the exact amount. PS. I *think* a packet is 7g (from memory!) but just want to be sure. Thank you.
Hi Sarah Jane, yes you’re right 1 packet of yeast is 7 grams or 2 1/4 tsp 🙂
Thanks, that’s perfect!
Ooh, the perfect addition to a home cooked meal. Love it!

Even though we don’t celebrate thanksgiving here in Australia, I definitely will be making these rolls. Love home made bread!
These look delicious! Approximately how many does one recipe make?
One recipe makes about 30 rolls
