I’m partnering with popchips today to share a recipe for your 4th of July gathering tomorrow. This dish started off as one of my very favorite salads a few years back. Everyone I’ve introduced it to continues to make it, it’s that good. Then last year at a family gathering we starting to dip chips into it and it immediately turned into my favorite summer dip! A perfect compliment to a big bag of popchips.

Adapted from an old issue of Everyday Food:
Sauteed Corn and Black Bean Salad
Sautee kernels from 3 ears of corn in 2 T of butter until they start to brown slightly in spots. Remove from heat and toss with:
1 can of drained black beans
1 sliced avocado
2 T chopped green onions
Juice of 2-3 limes and
A handful of roughly chopped cilantro
Serve chilled

yumm! chips and dip are one of my guilty pleasures but this sounds pretty healthy!
Love this. I make a very similar corn and black bean salsa (basically your recipe but add a jar of salsa!)
