For the past seven years we’ve made the same St. Patrick’s Day dinner which I posted about last year. It started when Henry was a baby and Jared was coming home from a long ski trip in Switzerland. He was arriving on St. Patrick’s Day so I wanted to make something special for his first dinner home. My sister in law, Erin, had a great lineup of St. Patrick’s Day recipes that I used and they’ve become our traditional meal ever since.
Today I thought I’d share these delicious Irish soda scones. They’re really easy to make (although I can’t promise they’re traditionally Irish).
Here’s the recipe…
IRISH SODA SCONES
Preheat oven to 425 degrees
2 c. flour
1/2 t. salt
1 tsp. soda
2 t. cream of tartar
2 T. sugar
1/4 c. butter
2 oz. currents or raisins (we cut our raisins small)
about 1/2 c. milk
Whisk dry ingredients together, cut in butter, add dried fruits. Add enough milk to give a soft dough. Place on floured board and pat or roll to desired thickness about 3/4 to 1 inch. Cut out and put on greased tin (cookie sheet), well spaced out. Brush with one slightly beaten egg. Bake at 475 degrees for 7-10 minutes.
We used the top of a bottle to cut a round shape like a biscuit, although you can make them triangle shaped as well.
