Have you ever tried making homemade granola? I did for the first time the other week and a couple more times since. It so easy and super delicious (way better than the store bought kind). I adjusted a recipe I saw in Everyday Food to this one:
Pecan-Molasses Granola with Coconut and Cranberries
1/3 cup molasses
1 1/2 T vegetable oil
1/2 t cinnamon
1/4 t ground cloves
1/2 t salt
3 cups rolled oats (not quick cooking)
1 cup sweetened shredded coconut
1 cup pecans roughly chopped
1 cup dried cranberries or other berries
Preheat oven to 325 degrees. Mix together oil, molasses, salt and spices. Add in oats, coconut, pecans and cranberries. Stir gently until well incorporated. Spread evenly on a baking dish and cook for 15-20 minutes turning once halfway through. Let cool completely.

I made homemade granola a lot last winter, but the truth is that I like the store bought stuff better. Now that I'm working more, I'm not sure if I'll start making it again.
I started making granola last winter (off an Everyday Food recipe nonetheless) and haven't stopped since. I just make Pumpkin granola last week and it's been such a nice fall addition to breakfast!
