This kale apple salad is full of rich flavors and texture. It’s a wonderful way to slowly let go of summer and transition into delicious meals with a fall feel. Serve this salad for lunch, or for a light dinner.

Kale Apple Salad
Prep time: 10 minutes
Yields: 2 servings
Ingredients:
3-4 cups chopped kale
1 12 oz can chicken breast
1 cup whole grain wild rice, cooked
1 cup cucumbers, diced
1 apple, diced
2 tablespoons feta cheese
3 tablespoons premade sweet onion dressing
Directions:
1. Chop all the produce and place in a bowl. Mix the kale, chicken breast, rice, cucumbers, apples, and feta together. Add in the dressing, and mix well.
2. Serve immediately with a favorite roll or bread on the side, if desired. Enjoy!
