What if you spent just a few extra minutes to have a family breakfast? I’m sharing a few fun and delicious ideas to help make that happen for your family.
Each of these ideas take less than 5 minutes to make so you can spend that quality breakfast time actually with your family, not slaving over the stove.
1. Honeyed peaches and pecans vanilla quick oats (adapted from this Donna Hay recipe)
Cook quick 1 minute oats according to box instructions (boil water or milk, add oats, cook one minute and let sit for another minute). During the last minute, add 1/2 t of vanilla per serving. While it’s cooking, add a teaspoon of butter and a teaspoon of honey to a small sauce pan with cut up peaches and pecans. Cook for about 3 minutes and then top them on the oatmeal. Add more milk before serving. So yummy. You can use any seasonal fruit here!
2. No-pan Canadian bacon and spinach breakfast sandwich
I’ve seen a few recipes for making eggs in the microwave and thought it might be fun to try out. Cooking eggs in a ramekin makes them the perfect size of a breakfast sandwich. Plus cleanup is quick and easy.
Lightly scramble 2 eggs and place in a ramekin (you could do just eggs whites too). Microwave for about 2 minutes until mostly cooked. Top with Canadian bacon (you can warm that in the microwave too for a minute), cheddar cheese and spinach leaves and place on a toasted English muffin.
3. Avocado toast on multigrain bread with heirloom tomatoes, sunnyside up eggs and chives
The yummiest, most filing toast! While bread is toasting, slice avocados thin and then layer on: slice of heirloom tomato, a fried sunnyside up egg with chives sprinkled on top and a dash of salt and pepper.
4. Berry granola and yogurt parfait
Simply assembly here! Layer store bought granola (or if you’re ambitious, here’s my homemade granola recipe), berries, plain yogurt, a bit of your favorite berry jam into a pretty wine glass or ice cream dish. Top with more berries and a sprinkle of their favorite cereal.
