Winter is definitely here in Montana, and my mind is on sweaters (post coming soon) and hearty soups. Do you have a favorite soup you love to whip up this time of year? Here are 10 we’re loving for a quick weeknight meal…
10 Winter Soups
Almond butter pumpkin soup (image). I love pumpkin soup and this almond butter one is on my list to try this month.
Yukatan lime soup. Another family favorite. Think enchilada soup but more of a fresh, lime flavor. Great with quesadillas and sliced avocado.
Cream of broccoli soup. A classic crowd pleaser, this one is super easy and never disappoints (they might not even notice they’re eating broccoli).
Beef and Barley Soup. I got this recipe from Sarah when I had dinner at her house a couple years ago and it’s been a favorite ever since. Planning on making it this week. So filling and hearty, it’s delicious!
Curried butternut squash apple soup.This is one of my favorites! Serve with crusty bread and a drizzle of cream on top. Doesn’t get more fall that butternut squash and apple.
Minestrone soup. One of my family’s favorites, it’s healthy and hearty and a great leftover meal as well.
Cream of Parsnip soup (image). A perfect first course to a fancy meal (like Thanksgiving coming up). These flavors are so so good. I love this soup!
Chicken and wild rice soup. This is the coziest thing to make on a cold day. Everyone loves chicken soup with rice! Serve with fresh biscuits for extra comfort food points.
