PS You can sub the brown sugar for honey, maple syrup, or coconut sugar- I’ve tried all of them and they work great!
GLUTEN FREE PEANUT BUTTER OATMEAL CHOCOLATE CHIP COOKIES
1 cup natural peanut butter
1/2 cup brown sugar or other type of sweetener like honey, maple syrup, or coconut sugar
1 large egg
1/2 teaspoon baking soda
1 teaspoon vanilla
1/2 cup quick oats
1/3 chocolate chips (dark chocolate works great too)
1 teaspoon flaky sea salt
Mix all ingredients together, adding chocolate chips last. Roll into balls (a scooper works great if you had one), and bake for 10 minutes in a 350 degree oven.
My kids request these on the regular.

Gluten Free Peanut Butter Oatmeal Chocolate Chip Cookies
My very favorite soft and gooey gluten-free peanut butter oatmeal chocolate chip cookie. My kids request these on the regular.

Ingredients
- 1 cup natural peanut butter
- 1/2 cup brown sugar or other type of sweetener like honey or coconut sugar
- 1 large egg
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 cup quick oats
- 1/3 chocolate chips (dark chocolate works great too)
- 1 teaspoon flaky sea salt
Instructions
- Mix sugar with the peanut butter, egg, and vanilla until well combined
- Add oats, baking soda, and chocolate chips until just mixed
- Scoop with a ice cream scooper or roll with hands into balls onto a cookie sheet lined with parchment paper.
- Bake at 350 degrees for 8-10 minutes
