For those busy weekdays around the holidays, I’m always looking for dinner shortcuts with a crowd-pleasing result. Today I’m partnering with Safeway to share my crock pot chicken enchilada tacos, which fit the easy weeknight dinner bill with only 4 ingredients…
From the Safeway box this month, I had a few different items to choose from for our recipe curation. What would you come up with? There are lots of fantastic options, and I was so curious to try the 5 minute quinoa!
How do you meal plan each month? I first check my fridge to see what needs to be used before it goes bad. Then I come up with a list of potential recipes I’d like to make. Lastly, I always check the deals on my Safeway app to make final meal plan decisions.
Start with boneless chicken thighs, a can of enchilada sauce, a jar of salsa (your choice on type and heat) and the juice of two limes. Dump equal parts enchilada sauce and salsa into the crock pot along with the chicken thighs.
Now of course, with tacos it’s allllll about the toppings. I’m a big believer in a tangy sauce to go on top of my tacos. This one is so simple! Add 1/2 cup of sour cream to 1 T of Best Foods Mayonnaise, and 1 T of taco seasoning. Mix and add a splash of milk if too thick. You can also use greek plain yogurt as well to replace the sour cream.
