Have you been baking more than ever this year? Ever since March, I’ve been on a wild ride of sourdough starters to weekly homemade bread, homemade pizza, and weekend cookies. It’s been an explosion of baking at our home that everyone’s loved getting involved in. There are so many healthy baking options too, like these gluten-free cake mixes and almond flours. I’m excited to try these as well! I was excited to get the box in the mail and start to brainstorm a fall baking recipe, especially starting with those limited edition Signature SELECT Pumpkin Madeleines cookies. I cracked open that container and YUM! Just knew I had to make something delicious with them.

Today though, I’m sharing a simple way to jazz up otherwise ordinary madeleine cookies. Except we’re starting with an upper hand here, because pumpkin madeleines already are such a delight. But, what goes fantastic with pumpkin? Chocolate!
For these pumpkin madeleine dipped cookies, we’re using a few different items from the fall Safeway basket. In addition to the limited edition Signature SELECT Pumpkin Madeleines, we’re also using the O Organics Semi-Sweet Chocolate Chips and Shredded Coconut, and the Open Nature Buttercream Frosting mix. There are so many variations you can make with this! Sprinkles? Marshmallow Fluff? Nutella? Nuts? Time to clean out that baking cupboard and get creative with your dipping. I won’t judge you if you sample the whole box of pumpkin madeleines before even getting started. They’re THAT good.
First, we dumped the bag of O Organics® Semi-Sweet Chocolate Chips into a double boiler over 2 cups of water. This is by far the easiest way to melt chocolate. There’s no chance of burning and no need to add milk or cream. Great quality chocolate chips melt fantastically, and these were a dream.
Once melted, pour the chocolate into a small ramekin, the shredded coconut into another, and set up your dipping station. Don’t stress about that chocolate hardening, it’ll stay liquid once it’s melted and won’t seize up or cool for a while. And, yes of course, test it first with your pinkie. Maybe a second time too (no judgement). Set up parchment paper under a drying rack and get ready to get messy. This is also a great time to get the kids involved! Who doesn’t love dipping things in melted chocolate??
Dip each madeleine halfway into the chocolate, and gently place on the drying sheet. Sprinkle with coconut and try to keep your drooling to a minimum. Press them down to flatten the bottom madeleine bump a bit. Keep going until they’re all dipped and sprinkled, and then stick the tray with the parchment underneath into the fridge to harden.
If you’re wanting a double decker treat, add a layer of buttercream between two pumpkin madeleines. You can still dip them if you want! The combo of the buttercream frosting with the pumpkin, chocolate, and coconut was to die for.
Crazy to think how easy they are to make, as they’d make such a show stopping dessert at any fall family parties coming up. What fall treats are on your mind? Are you a pumpkin + chocolate fan as well?
