My kids eat over a dozen hardboiled eggs a week. For lunch, snack, breakfast, second breakfast, you name it. We’re egg people. Today I’m sharing a simple way to make one simple recipe, like hard boiled eggs, work for both an adult and a child’s lunch. I also like hard boiled eggs, but I love soy sauce eggs. Last year my sister Celeste drove out with her family for Easter. When she was unpacking her cooler from the car I noticed a ziplock bag of brown marinated eggs, which she insisted were the most delicious things ever (and great road trip food!). I’ve been loving them ever since! Soy sauce eggs, or shoyu tamago, are a staple in Japanese ramen. But you don’t need ramen to eat them – they’re delicious just on their own. Sweet and salty, you might never go back to regular hardboiled eggs.

The bok choy and tofu is really simple too: sautee your greens (any greens really, spinach works great too) and cubed tofu with sesame oil until browned and the greens start to wilt. Then add a splash of soy sauce and finish it off with a sprinkle of sesame seeds. Such an easy and delicious lunch, made even better with a soy sauce egg on the side. So here’s what my adult lunch looked like:
Mostly adult, that is! I have to have something sweet after every meal, and Pure Growth Organic snacks are the perfect fix!
