Today, we’re doing another Baking with Toddlers post and making a delicious and gorgeous Christmas dish of Swedish rice pudding with raspberry sauce. It’s sounds fancy, but it’s super easy to make, and a great one to get toddlers involved in! We’re partnering with fairlife ultra-filtered milk for our recipe today.
Have you heard of fairlife milk? It’s high in protein, lactose free, reduced sugar (cut in half!). They start with high quality milk from independent American family famers committed to humane animal care and sustainable agriculture. Then, their unique filtration process concentrates the milk’s natural ingredients like protein and calcium while filtering out lactose and reducing the sugar.

First we poured 8 cups of whole fairlife milk into a pot. Stir in 1 1/4 cups of arborio rice (risotto nice), and 1/4 cup of sugar. Let cook, stirring frequently for about 40 minutes until liquid is all absorbed. Add 1 1/2 t of vanilla.



Time to test our raspberries while we wait!


Mix your rice pudding with 2 cups of sweetened whipped cream, and spoon into bowls.
Drizzle the raspberry sauce around, top with a couple more raspberries and mint for decoration. So delicious! Creamy but not too sweet, and so festive.

One of my all time favorite comfort foods! My mum used to make this for dessert (and sometimes even breakfast) quite often when I was a kid, but we called it Creamed Rice. It was probably one of the first foods I learnt to make on my own 🙂 We always made it with long grain white rice when I was a kid (probably because it was the cheapest!) but I make it with arborio rice now too as it’s not as mushy.
I think I might need to make some tonight 🙂
