Vegetable Tian
This dish is really pretty looking and delicious. I’ve made it quite a few times now and it’s always a hit. It’s a great dish to serve for company but it does take a little time to prepare. It’s hard to tell in the picture, but it’s essentially zucchini, tomatoes, and potatoes stacked on their side on top of a bed of carmelized onions baked with grated greyere cheese on top. Sometimes I can’t find greyere so I use a sharp swiss. You can substitute other kinds of veggies too, I sometimes use sweet potatoes instead of the small red. Liz made this for dinner the other night, and though I thought I didn’t like sweet potatoes, squash, or tomatoes, I LOVED it. So good…I wish I could have some now…
