Years ago when I hosted Thanksgiving I planned and shopped for Thanksgiving day, only to find that it was the days surrounding it that left me feeling ill-prepared to host.
There’s eating out, but that’s never fun with little kids and with a big group it can be really challenging to coordinate. It was an unexpected challenge especially when looking for healthy ideas to feed big groups (gotta save room for Thanksgiving indulgences)! What solutions have you found?
Last month I had the chance to visit Cobram Estate for a tour and it was so fascinating! We learned about the health benefits of fresh olive oil, olive picking (including these incredible machines here), and how the olives are processed and bottled in the plant.
Today I’m using Cobram Estates Extra Virgin Olive Oil and Boars Head hummus to make this Mediterranean dip. I grew up with Boars Head meat in New York. It was a staple in NY delis, and the only acceptable form of deli meat I’d eat. I’ve been so picky about finding Boars Head meat back here in CA, and Safeway always carries a great variety of Boars Head products. Hummus though! I had no idea they carried it and so many varieties too! We tried the pumpkin pie hummus in a dessert dish at the Cobram event, and it tasted JUST like pumpkin pie mousse. But because it’s bean based it’s so much healthier. There’s a chocolate one too! I can’t wait to experiment more with those dessert hummus products from Boars Head. Yum!
Next it’s time to make the salad to go on top! Combine chopped tomatoes, cucumber, kalamata olives, and cubes of feta cheese (Boars Head makes feta too!) with chopped parsley and mint. Drizzle with olive oil and a squeeze of lemon. Season with salt and pepper to taste. Toss together!
For a quick and fancy drink, drop some frozen strawberries and a pinch of sugar into the bottom of a glass and finish with some Dasani Sparkling Flavored Water. So easy, but feels festive! Maybe add a splash of vodka if you’d like for adults? I keep these cans handy for refreshing drinks all the time. Sparkling water is my go-to beverage of choice!
