What are you cooking up these days for easy weeknight meals? I’m starting to get in a funk as schedules have been a bit crazy lately, so I asked one of our lifestyle editors Nicole Grant Kriege to share what her family of four loves eating on busy weeknights…
Black Bean Tacos with Avocado Sweet Corn Salad. My friend Erin has the most amazingly simple and healthy recipes on her site, Naturally Ella. This one’s my favorite for weeknights because it’s so easy and delicious. The zesty lime and spiced beans are a big hit! Using handmade tortillas makes a big difference. If it’s a really busy night I use canned corn and canned black beans. If I have some on hand, I add five minute pickled onions for an extra pop of color.

Roast Salmon and Broccoli with Chile-Caper Vinaigrette. We just found a fantastic and affordable fish monger near our house, and my kids love salmon, so this recipe’s on heavy on rotation. My kids eat the salmon and broccoli plain and my husband and I use the Chile-Caper Vinaigrette – though honestly it’s not very spicy, just super flavorful. I love that I can cook it all on one pan, and I usually serve it over a wild rice blend.

Mediterranean Plate. This is a great one for an easy Friday night! Throw some red pepper hummus, toasted whole wheat pita bread, olives, feta, and cucumber or tomato on a large platter and you’re good to go. Not gonna lie – I buy everything pre-made, but it’s a real time saver and it looks so nice on the plate. Sometimes I add a little leftover roast chicken or falafel (from frozen- Trader Joes) or even canned sardines for more protein.

Chicken Shawarma / Lentil Daal. I have so much love for my Instant Pot. It’s really tough to choose between the Chicken Shawarma and Lentil Daal recipes (the daal is from this cookbook), so I’ll list them both. I’m really lazy about the Chicken Shawarma recipe and never marinate the in advance or make the garlic sauce – and it always turns out great! Jeff picks up Ethiopian injera bread on his way home to pair, and if I have time I improvise a cucumber side salad with a little yogurt, lemon, and cumin.
