Easy Weeknight Meals: Part 10

Today we have another post in our feature on Easy Weeknight Meals. In this series we ask some of my friends and home cooks what crowd-pleasing meals they make for their families on a busy weeknight. And today we’re sharing three recipes from my friend, Jessica. She and her husband own a gorgeous bookstore in Temescal Alley in Oakland called Book/Shop, and she’s the mother to two sweet boys. Jessica’s always cooking up something amazing for her family. Here’s what’s on their weekly rotation…

1. Marcella Hazan’s Tomato Sauce“I love it because it is beyond simple (three ingredients!) and uses items that I typically already have on hand.  My kids eat it too.”
2. Ginger Fried Rice“I will usually make the crispy garlic and ginger beforehand, and then cook up the rice and eggs right before we are ready to eat.  Make sure the fried eggs come out a little runny; it’s really what makes the dish.”
3. Roasted Chicken With Potatoes, Arugula and Garlic Yogurt “The flavor combinations are just incredible. One reason I make it often is that you can prep everything early in the day and put it in the fridge until you are ready to cook. Then you basically just throw it all on a sheet pan and roast for 45 minutes. So easy.”
