September is here and in my mind I instantly think about apples and baking. You might remember these apple cider donuts from last year that I made, and I wanted to go in that same route but with something a little simpler. If you’re feeling like donuts but don’t feel like doing all the work, fritters are the way to go! This recipe requires little effort and you can whip these up in 30 minutes with prep time. Perfect for a yummy breakfast or an sweet afternoon snack.

Apple Fritter Bites
makes about 2 dozen
vegetable oil for frying
1 1/2 cups flour
1/4 cup granulated sugar
2 tsp. baking powder
1/2 tsp. salt
2 tsp. ground cinnamon
2/3 cup milk
2 eggs, beaten
1 tsp. vanilla extract
2 tbsp. butter, melted
2 Granny Smith apples, cored, peeled & cubed
Glaze:
1 cup powdered sugar
1/4 tsp. salt
1/4 tsp. vanilla
1/4 cup milk
Directions:
Heat up oil in pan or fryer to 350F. Mix dry ingredients together- flour, sugar, baking powder, salt cinnamon set aside. In another bowl add eggs and lightly beat them. Add in vanilla and milk to the eggs and mix together. Combine wet ingredients with dry ingredients, fold it gently until not quite combined, then add in melted butter and mix. Fold in cubed, peeled apples into the batter.
Add about 1 tablespoon of batter into the heated oil. I like mine a little flatter, and dragged the spoon as I dropped the batter creating more surface area. Once golden brown remove from the oil and set on paper towel to drain. Dip fritters into the glaze while still warm. I preferred mine to sit for about 30 minutes I found the flavors to enhance more.
Omgosh this looks wonderful and apple fritters are one of our favorite types of doughnuts. Will definitely be trying this out. Pinned.
