Three Ideas to Upgrade Your Lunch

homemade ramen noodlesI work mostly from home which is fantastic in a lot of ways. I don’t have to wear makeup or do my hair, pajamas are my go-to work uniform, and I can take snuggle breaks with Edie whenever I want. But it also means not a lot of fancy lunches out which, let’s be honest, is an awesome perk of working in an office. Ever notice how food doesn’t taste as good when you make it yourself? It’s so frustrating! Today I’m sharing three ways to upgrade some basic lunch items in your cupboard so you don’t feel like you’re eating tuna straight out of a can every day. It might be a little extra effort, but I promise it’s worth it!

1. Upgraded Ramen: When was the last time you had ramen noodles? Such an easy, yummy lunch but a few upgrades can make it feel like you’re dining out. Throw the ingredients in while the noodles are cooking.

Here’s what I add to my ramen:

Chopped up vegetables
One cracked egg
Scallions
Thai chili paste (after it’s cooked)

2. Upgraded tuna salad: Tuna and mayo is edible, but barely. I love adding a ton of other stuff in as well which makes it taste so much better and adds a lot of great texture. Throw it on some lettuce or make a sandwich with some fresh multigrain bread.

Finely diced celery
Finely diced pickles
Fresh lemon juice
Big pinch of dill (a must)
Pinch of onion salt
Try finely diced olives as well!

3. Upgraded peaches and cream steel cut oats: A quick oatmeal pack is easy, sure, but just a few additions to plain oats can make it amazingly delicious. I love to make crockpot oatmeal. Just throw in the oats with water (amt on your package) into the crockpot the night before and you have a delicious pot waiting for you in the morning.

Here’s what I add to my oatmeal:

Fresh or canned peaches, peeled and diced small
2 Tablespoons of milk (or cream if you’re feeling fancy)
1 T of brown sugar
Sugared pecans (saute them in sugar and butter for about 4-5 minutes and then let harden on wax paper)

Yum. I’m hoping I have some tuna in my cabinets downstairs so I can try it with some of your upgrades tomorrow!

I had been making tuna with dijon mustard and chopped grapes on a rice cake (sounds weird but it’s really good). Now I need to try it with pickles and whatever seeds I can find on a bed of lettuce!

That ramen looks amazing and the oatmeal sounds delish! I always end up eating leftover food that doesn’t really taste good. or grilled cheese

I ate ramen so much growing up in an Asian household, and I always have to have some in the pantry at home. Its a great back-up food, and I always put an egg in (sometimes cracked straight into the soup, sometimes I fry it in a pan then put it on top). If I have leftover veggies, those go in to. I also like sprinkling on some furikake on it (Japanese seaweed and sesame sprinkles).

I add chopped carrots and shelled sunflower seeds seeds to my tuna salad. It is delicious. I also doctor left over cheese pizza with an arugula, chopped tomato salad.

Toasted and salted sunflower seeds ! I toast a whole jar ad once and then have some ready to toss over salads or cream cheese sandwiches. Or I pick some just like this as a mini snack when I pass by that jar : )
