Unless you’re willing to use a power tool, carving a mini pumpkin is not an easy task. I imagine they could look pretty cute, as mini things do, but I’ve never seen one successful done. In thinking about alternatives, we found that a grapefruit would be very easy to carve with a similar mini pumpkin shape and color, and the perfect vessel to house a delicious fall harvest salad. Or, put a tea light in it and light up your mini jack-o-lantern at night!
I’ve been nibbling on this salad all week, it’s delicious!

1. Using a serrated knife, cut out a top and then scoop the insides out. Save the top and as big of chunks as you can for the salad, and anything leftover you can use to make my favorite grapefruit sorbet (serve it in grapefruit jack-o-lanterns as well!).
2. With a small pairing knife, carve out a jack-o-lantern face.
Fill it with Fall Harvest Salad (adapted from here):
3 large apples (at least one granny smith)
2 medium oranges
2 large lemons, juiced
1 cup of grapefruit chunks
1 tsp cinnamon
1 Tbsp maple syrup
1 Tbsp honey
1/2 – 3/4 cup pistachios
1 Tbsp craisins
2 Tbsp golden raisins
