A Trio of Perfect Homemade Popcorn

Stovetop popcorn has become one of my very favorite late night snacks! Way better than the microwave version, and so many delicious variations. It’s the perfect crowd pleasing food for a party or a movie night with friends. Everyone loves popcorn! I’m sharing three perfect homemade popcorn recipes today: Olive Oil + Sea Salt, White Chocolate + Candy, and Salted Caramel. Do you have a favorite? I’d love to hear your variations! Also, have you every tried pouring a box of hot tamales into warm buttery popcorn? Man. That is some good snacking right there.

The salted caramel I think is my favorite though. My grandmother used to make this caramel popcorn all the time. We’d eat it in her basement and watch movies under soft blankets on her old leather couch. We’d always fight over who got to hold the huge popcorn bowl.

Use this basic stove top popcorn recipe for all three:

Olive Oil + Sea Salt Homemade Popcorn

Pour a thin layer of olive oil on the bottom of a large pot. Add a single layer of popcorn kernels. You want them to be very crowded but not more than one layer thick. Heat at medium heat with the lid on until popping begins. Then turn down the heat slightly and shake every 30 seconds or so. Start shaking a bit more when the popping starts subsiding. Remove from heat when the popping slows to one pop every 2 seconds or so. Pour into a large bowl and salt with sea salt generously. You don’t need any additional butter/oil. I promise it’s delicious as is!

Salted Caramel Popcorn:

1 batch of basic stovetop popcorn
1 stick of butter
1 cup of brown sugar
1/4 cup of corn syrup
1 t of salt
1/4 t of baking soda
1/4 t of vanilla extract

Make one batch of basic popcorn and set aside in a large mixing bowl. In a small pot melt the butter and then add the brown sugar and corn syrup. Stir until mixed and then let it sit, untouched for about 5 minutes, until it start to turn an auburn color. Then remove from heat and add vanilla, salt and baking soda. Let cool for a couple minutes and then pour over the popcorn. Mix thoroughly. Not every kernel needs to be coated (see below). Spread onto a baking sheet and bake for about 30 minutes at 275 degrees, flipping occasionally. Let cool completely on waxed paper.

White Chocolate + Candy
1 batch of basic stovetop popcorn
1 bar of white chocolate, chopped
Your favorite chocolate candy (I like either mints or reece’s pieces)
Make one batch of basic popcorn and set aside in a large mixing bowl. Melt the white chocolate over a double burner. Pour over popcorn and stir. Add your box of candy. Refrigerate to harden.

I love coconut oil & Himalayan sea salt. It reminds me of the old school movie theatre popcorn.

The olive oil and sea salt version sounds fantastic; I’ll definitely have to try it. One of my faves uses microwave popcorn, any of the light butter varieties (buttery microwave popcorn can be too greasy). Pop as directed and while it’s still hot pour about 1/3 into a bowl. Sprinkle with your favorite shredded cheese. Repeat until you’ve got all the popcorn in the bowl. Top with more shredded cheese and microwave for 15 seconds or until the cheese melts. Add lemon pepper or garlic pepper or pepper flakes and devour!

We make stove top popcorn all the time. We use our Wok (so many uses!) My favorite recipe is to use almost equal parts butter and brown sugar, dash of vanilla, some cinnamon, cocoa and some times some nutmeg…

I posted almost the exact same caramel corn recipe recently! GMTA. My Nana makes olive oil stovetop popcorn all the time and adds garlic salt. Delish! Oh, and she eats it with chopsticks!

Welcome back! I just tasted my first "Pie Shake" last summer, I tried pumpkin and raspberry, and they were delicious!
