Easter Dinner for Two


Jared came home safe and sound from his swiss alps trip super early Easter morning, so I wanted to make something special for his first day back, but didn’t really feel like being with anyone besides him and our babe. It was also the first meal in our new dining room (pics to come soon); and it was fabulous, just the two of us (babe ended up falling asleep early):

Oven Roasted Asperagus

Rolls

Lemon Raspberry Tart with fresh lemon curd (I used raspberries instead of blueberries)


I have so much leftover ham. Any favorite recipes for using ham besides sandwiches, ham/eggs and quiche?

We had ham fried rice: Saute onion, mixed veg. ham, one egg scrambled, soy sauce and oyster sauce. Add leftover brown rice. Ham and bean soup was an option for us also, but it was too warm for soup.

Right-on Rachel A. We did the same from Barefoot C. It was Dee-lish! (fridge leftovers for lunch today as half a spiral ham is WAAAAY too much for 2 people!)

I’ve been using ham for the same leftovers and I’m sick of ham. Although I haven’t made the quiche yet. After that, it’s getting thrown in the freezer.My mom used to make some sort of bean soup with leftover easter ham and ham bone, but i don’t really like bean soup, so i have no great ideas.Can’t wait to see the diningroom!

Oh my goodness. Marmalade glazed ham must have been all the rage this year! We had the same thing. I got the recipe from Giant at the “Cook’s Corner”. They get pretty creative with their recipes. As for left over recipes, I wish I had some. We have a good bit leftover as well!
