Summer Salads: Classic Cobb

Cobb salads have always been my favorite. It might have something to do with the fact that the more stuff on the salad the more it feels like you aren’t really eating a salad at all. So yeah, this one’s a full meal. But still a healthy one. Staples on my cobb salad are: roasted chicken, egg, avocado, any veggies in the fridge and any cheese on hand (usually blue or cheddar). Oh yeah, and some romaine under there somewhere.

The vinaigrette is also whatever citrus I have on hand (lemon, lime, etc) with a dash of vinegar and then 2-3x that amount in olive oil. I mix in a dab of mustard, salt and pepper and whisk it until blended.

Yum! Looks perfect for a summer evening meal. Cobb salads are one of my favorites, yet I forget to make them as often as I should. Thanks for sharing this recipe – I'll definitely give it a try. I may even have to try the chevre bleu cheese I bought at the market here in France earlier this week – I'm sure it would be a delicious variation.

this looks delicious! I love salads like that because I'm allergic to lettuce (so weird, I know), so at least I get to eat the toppings!

Mmm Cobb… I usually just go for a bit of vinegar and olive oil with salt for dressing.
