Summer Salads + A Challenge

I’m always on the the hunt for new, delicious salad recipes this time of year to add to our repertoire and serve as a main course. I always feel better when I’ve had a leafy salad for lunch or dinner instead of heavy meat and potatoes. Especially when it’s warm. Plus, it’s an excuse to pick up some delicious fresh bread to go with it. Do you have a favorite summer salad? Next week I’m planning on doing a personal challenge of eating a new and different salad every night for dinner. Would you like to join in on the challenge?  I’ll report back for sure! A few of my current favorites are below. I’d love to hear yours as well to consider for our menu next week.

Dr. Weil’s kale salad (Reminds me of the amazing one they serve at the cafe down the street. Love that it’s even better the next day. Hate soggy leftover salad!)

Garlic roasted potato, spinach and egg

Brussels sprouts salad with pomegranate, walnuts, jalapeno

Those salads sound amazing! Especially the potatoes, spinach and egg. I recently got my kids to try making their own and they came up with this one that’s pretty good! butter lettuce, corn, peas, avocado, strawberries – great with a sweeter dressing.

When I still need a “filling” but easy salad, I just add kale, croutons and pieces of fried chicken (totally defeats the salad, I know – but so good!) with my fave creamy dressing.

Thanks Liz for all these great recipes, I’ll try them out for sure! I recently bought the cookbook “Salad of the Day” which has 365 salad recipes – I highly recommend it! It’s been helping me to keep up with a healthy summer eating routine.

I just LOVE any kind of quinoa salad. You don’t even need a recipe, it compliments every flavor and just dress it lighter than a green salad

oooh, I needed this post. Here are two more that I can’t live without:

1. lentils, beets, celery, cilantro or parsley, any other small veggie you need to get rid of (corn? avocado?); with balsamic and olive oil

2. Any hearty veggies (roasted root veggies, brussel sprouts, Kale), Quinoa or wild rice, the dressing is the BEST THING EVER: tahini, soy sauce, garlic, lemon juice. I put this on everything. I make a big jar of it every week and it never lasts more than two days.
