Here’s a really simple way to dress up store bought cupcakes for St Patricks Day this coming Monday: A rainbow of gumdrops with rolo pots of gold underneath! (PS Have you ever made rolo cookies? One of my favorites!)

We used brass wire to string the gum drops through in rainbow order. Trim to about 1 1/2 inches at the end and stick them into the iced cupcake.
Speaking of festive food, every St Patricks Day we make the same thing: slow cooked corned beef and cabbage, roasted root vegetables (parsnips, carrots, beets, etc), irish soda scones, and fresh lime drinks . Grasshopper pie for dessert (mint chocolate chip ice cream in an oreo cookie crust). We’ve made this menu 6 years in a row, it’s delicious!
