Cooking Club: Thanksgiving

We had cooking club again a couple nights ago where we tested out some Thanksgiving recipes. I was assigned a side dish and made these roasted marshmallow sweet potatoes that I remembered from Thanksgiving a few years ago when my sister in law made them.
This is the best way to eat sweet potatoes, trust me people. I love how the marsh mellows look coming right out of the oven.

HOLIDAY SWEET POTATOES

1/2 C. butter

6 sweet potatoes, peeled, sliced, boiled until soft, and drained
1 t. baking powder
1t. vanilla
1 t. ground cinnamon
2 eggs
3/4 C. sugar
3/4 C. buttermilk
3/4 C. chopped pecans (optional)
mini marshmallows for topping

Add butter to hot potatoes. Combine with next 6 ingredients in
blender or with mixer. Stir in pecans, if desired. Place mixture in a
greased 2-quart casserole dish and bake at 350 for 30 minutes. Top with
marshmallows during last 10 minutes of cooking. Serves 10-12.

Other delicious recipes from the cooking club (I’ll keep updating them as they come in):

Ham and Cheese in Puff Pastry
Turkey Roulade with Apple Cider Gravy
Bread Stuffing with Bacon and Apples
Smashed Mashed Potatoes with Sour Cream and Chives (no butter!)
