For these pumpkin madeleine dipped cookies, we’re using a few different items from the fall Safeway basket. In addition to the limited edition Signature SELECT Pumpkin Madeleines, we’re also using the O Organics Semi-Sweet Chocolate Chips and Shredded Coconut, and the Open Nature Buttercream Frosting mix. There are so many variations you can make with this! Sprinkles? Marshmallow Fluff? Nutella? Nuts? Time to clean out that baking cupboard and get creative with your dipping. I won’t judge you if you sample the whole box of pumpkin madeleines before even getting started. They’re THAT good.
Once melted, pour the chocolate into a small ramekin, the shredded coconut into another, and set up your dipping station. Don’t stress about that chocolate hardening, it’ll stay liquid once it’s melted and won’t seize up or cool for a while. And, yes of course, test it first with your pinkie. Maybe a second time too (no judgement). Set up parchment paper under a drying rack and get ready to get messy. This is also a great time to get the kids involved! Who doesn’t love dipping things in melted chocolate??
If you’re wanting a double decker treat, add a layer of buttercream between two pumpkin madeleines. You can still dip them if you want! The combo of the buttercream frosting with the pumpkin, chocolate, and coconut was to die for.
