    Easy Weeknight Recipes Gazpacho

    Today in our series on Easy Weeknight Meals we’re joining my assistant Marta, whose husband and her love cooking Mediterranean meals from her back home in Barcelona. Mediterranean food is rich in fruits and vegetables, whole grains, fish and olive oil. Here are three easy meals they like to cook for their two girls on a busy weeknight…

    Andalusian Gazpacho. (image above) Tomatoes are so good right now, so now’s the time to make this cool soup. Marta recommend, “To make it carb free,  skip the bread. And never add water, if you want to liquify just use more tomatoes.”

    Easy Weeknight Recipes Omelette

    The Spanish Omelette (image above) is a great dish you can adapt to the contents of your fridge. Marta suggests, “Add any chopped vegetables you want and even meat. Play with your spices! It’s also a great option to bring to a potluck and leftovers are delicious to snack on.”

    Easy Weeknight Recipes Salad

    Pear and Arugula salad. Marta says, “Although this are the two staple ingredients, any combo with cheese (say parmesan, blue, goat…), plus nuts and/or dried fruit can make it taste a bit different and just as delicious every time

      When I was in college studying abroad in Sevilla, I ate a TON of spanish tortillas! They saved my non-meat eating butt. I lived with a family in Sevilla, and the mother would store food in the (un-used) oven, which surprised me (in America we are so paranoid about keeping food cold).

      The family was older (husband/wife), and it’s also where I saw first-hand that a husband with a career gets to retire (and watch TV, eat what his wife cooks, relax) whereas a housewife never gets to retire.

      I like the carb-free alternative for the gazpacho. Sounds delish!
