The Perfect Picnic Sandwich

I’m all about a spontaneous picnic and good food.  This sandwich is fast prep and so easy to make, pack and eat at your next picnic!

So I added a little twist to the classic and infamous caprese sandwich.  I’ve always enjoyed them but am always wanting a bit more flavor so I made a roasted garlic oil spread that really made the sandwich come together. And I’m always looking for any opportunity to add salami, so I threw that in too. It can definitely be left out for a vegetarian option.

The Perfect Picnic Sandwich
1 baguette
1 head of garlic
3-4 tbsp. olive oil
balsamic vinegar, drizzled
salt & pepper, to taste
salami
fresh mozzarella
tomatoes
basil

1. So the only preparation for this sandwich is to roast the garlic for the spread.  Preheat oven to 400ºF. I kept the entire garlic bulb intact and sliced the top off exposing all of the cloves.  I drizzled it with olive oil and wrapped it in foil sealing off all edges leaving a little bit of breathing room for the garlic to roast. Leave it in the oven (directly on the rack is fine), for at least 30min up to 1 hour. The aroma that this gives is pure heaven, seriously so good.
Once it’s roasted and ready, squeeze out all of the roasted garlic cloves in a bowl and add in about 3-4 tbsp. olive oil and a little bit of salt and pepper. Stir it around breaking up the garlic creating a loose garlic oil spread and put on one side of the bread. On the other side of the bread drizzle balsamic vinegar.
2. Layer up the sandwich to your liking with sliced tomatoes, sliced mozzarella, basil leaves, salami and pack up your sandwich for your picnic!
