    Chia seeds anyone? This is an extremely healthy and easy snack that only takes 3 ingredients, and even better yet, is gluten and dairy free… don’t let it scare you, I promise it tastes soo good. Chia seeds have been a healthy trend going around for awhile now and they have so many health benefits. They fill you up with fiber, protein, have more omega-3 fatty acids than salmon and absorb 30 times their volume in liquid helping you de-bloat (the best benefit in my opinion). You can make this pudding the night before, let the chia seeds do all the work and enjoy it the next morning!

    Three Ingredient Chia Seed Pudding
    fills 2 small mason jars
    1 (13.5oz) can coconut milk*
    1/4 cup chia seeds
    1 tbsp. honey
    1 tsp. vanilla (optional)
    *You can also substitute it with almond milk and then mix in a little plain yogurt to thicken it

    Mix them all together and pour into mason jars or an airtight container. Let it sit in the refrigerator overnight and enjoy it the next day topped with any fruit or nuts preferred. I topped mine with dried coconut, blackberries, and goji berries. What would you top your pudding with?
    *You can substitute coconut milk with almond milk and then mix in a little plain yogurt to thicken it if you don’t have coconut milk.

      Coconut milk in a carton is made to be a beverage. The can is more for recipes. It’s used in sauces, curries, and can be used in baking.

      I think if you want to use the carton you might want to add yogurt for a thicker pudding. Like she says for almond milk, which is also a beverage.

      This so good! I get organic coconut milk in the can at Sprouts and Whole Foods. The brand is Thai Kitchen.

      I just wanted to let you know there are hundreds of ways to use chia seeds. I started using them some time ago when trying to recover between bouts of chemo. I truly believe chia seed is a miracle food. I grind the seed, keep it in a pint mason jar with a flat and ring on it tightly closed in the fridge. I have a coffee grinder for grinding seeds like chia and flax. I keep a coffee scoop in the jar and whenever I make a batch of steel cut oatmeal, pancakes/waffles, meatloaf, spaghetti sauce (lasagna, etc.) I always add a couple of scoops to the “mix”. I also make the overnight breakfasts in a jar so I can grab-n-go for work, ground chia seed goes in those jars with the oatmeal. And my guilty little secret, 3 TBLSP nut butter (peanut, cashew, almond, etc.) 1 tsp ground chia (could use whole), 2 TBLSP real maple syrup or raw honey spread on hot toast or waffles/pancakes. I started grinding the seed at the suggestion of my nutritionist because the “slime” from the whole seeds made me nauseous during chemo. There is still the ability for things to thicken if left to sit in liquid, but it isn’t as overwhelming or slimy. I hope this is helpful.

      Why wouldn’t the coconut milk in a carton work? Does it have to be in the can? What’s the difference? I always buy the carton because I can get organic. I can’t find organic in the can.

        You can use any liquid of your choice with chia pudding. I use water, blue berries and/or other fruit, and 2 drops of Stevia as a daily pudding. I let it soak for about ten minutes to thicken.coconut milk sounds delightful and would be a delicious treat

          Thanks, I’ll have to look on the internet for it as we don’t have a Sprouts or Whole Foods near us. But what I’d really like to know is why can’t coconut milk in the carton work for this pudding? It specifically lists in the can, and Brittany answered someone else that it is canned. Why not from the carton? What’s the difference?

            Coconut milk in the can is thick and has a texture similar to sour cream and in the carton is more like milk. It has a rich coconut taste. Both will work but will just have a different consistency.

              Thanks Leta. Wow, thick like sour cream? What else would you use it for, besides pudding? You certainly wouldn’t want to drink it if it’s that thick. I definitely need to find some of this!

                I have a recipe for Malay fire chicken (I leave out most of the fire) and it is a sauce with a coconut milk base, chicken and vegetables over rice. Deeelicious

                Another recipe I am eager to try is a can of coconut milk mixed in a high speed blender with fresh pineapple cut into chunks and frozen.

      Hi, how long does it keep for? I made some with mango puree added too but didn’t know how long it was ok to keep. Could it be frozen?

        Hi Anita, the chia pudding should last for about 4 days in the fridge and with your mango puree added I would assume 2-3 days? And I wouldn’t suggest freezing it, it won’t defrost to its original state but you can always freeze them in ice cube trays and use it in a smoothie if you want!

      Thanks for the recipe–I’m always looking for dairy-free desserts. Is the “coconut milk” the kind in the can or the kind in the carton (sold by the almond, rice, hemp, and other dairy-free milks)?

        Stacey, it’s a little like tapioca pudding. I enjoy it, but the texture is definitely a love it or hate it thing with chia seeds!

          Thanks Sarah—I’ve never had tapioca pudding, but given how much I don’t like those chia drinks, I’m thinking the texture might be similar so will avoid it:)

        Hi Stacey, I totally understand how you don’t like the chia seed drinks! They have an interesting slimy texture, but this pudding texture is similar to rice or tapioca pudding or a thick yogurt, as long as you let it sit over night it shouldn’t be anything like the chia drink! Give it a try and let me know what you think! 🙂
