Grilled Peach Pizza

If you’re anything like me, then peaches are one of the things you look forward to most in the summertime. I’m convinced there are few things in life better than biting into a perfectly ripened, juicy peach…except for maybe grilling perfectly ripened, juicy peach slices and putting them on a pizza with mozzarella, caramelized onions, prosciutto, and fresh basil?! (see recipe below!) I am such a sucker for the combination of sweet & savory, and this has officially become my new favorite summertime pizza.

INGREDIENTS
1 to 2 medium-sized ripe peaches
mozzarella cheese
caramelized onions
prosciutto
fresh basil
your favorite pizza crust

DIRECTIONS
Caramelize onions in a pan with olive oil, a splash of balsamic vinegar (optional), and salt & pepper until onions are browned. Grill peaches for a few minutes, and crisp up some prosciutto in a pan (if you like yours crispy). Add toppings to your favorite pizza crust, and cook according to your individual pizza crust’s directions. Top with fresh basil before serving.

Just made this it was sooooo yummy! I will be making this many times. Except I chopped the basil n sprinkled it on before it went in the oven, sliced the peaches thin n drizzled it with balsamic glaze when it came out of the oven! Big winner! My hubby lived it too. I am trying not to go back for a third piece right now!

I’ve seen this before but never so irresistibly done. Maybe nectarines would be good as well.

This looks so yummy, do you think you can use other fruit too?

I think the idea is the savory with the sweet so any sweet fruits would probably work fine. Peaches are the sweetest this time of year so I think that’s why it works best. Let us know how yours turns out!
