Holiday salad

My sister gave me this recipe, and it’s the best ‘cranberry, gorgonzola, pecan’ type salad that I’m sure we’ve all had around the holiday season. It’s sooooo yummy and the pecans are candied. mmmmmm. what’s not to love about candy in salad and lots of sweet fruit? (it doesn’t really look like the salad above but isn’t it a pretty picture of a holiday salad?)

Celeste’s holiday salad (with Liz’s adjustments)

2 packages of pre washed spring mix salad or spinach

2 cups sugared pecans (to sugar pecans, fry them with 12 T sugar (how many cups is that?) and 3 T butter in a skillet. Wait until they caramelize, then let them cool on wax paper until hard). Her orginal recipe called for slivered almonds. I liked pecans better.

1/2 red onion chopped
gorgonzola cheese ( a medium size block)
1 package of craisens
about 10 strawberries cut
2 pears cut ( I added these because I had them in the fridge and it was a good addition)

dressing:
2 T dijon mustard
3/4 t salt
1/3 cup white vinegar
3/4 cup canola oil
1/3 cup sugar
1/4 cup grated onion

Mix well and pour over salad right before serving
